"Rosé d’un Jour was a sweet wine made with over-matured grapes, so depending on the vintage, it was made either with botrytis or passerillage. We have concluded the production of Rosé d’un Jour, with 2023 being the final vintage, to reduce the size of the vineyard and focus on the Chenin", said Martial Angéli.

This Pet-Nat is made from old vines of Aligote in Puligny-Montrachet. It has a crisp, lemony flavor with refreshing bubbles. By the way, "Chassornade" is a word coined by Frédéric Cossard, combining "Chassorney" and "Lemonade". Yes, he wanted to make a Pet-Nat that tastes like lemonade! It's cloudy because it was released without disgorgement.
This wine is made from grapes from Côtes du Rhône: a blend of Bouboulenc, Grenache Blanc, and Muscat d'Alexandria. It undergoes maceration-carbonic using special tank equipment for 14 months. Fred (Frédéric) named this wine 'Zizifredo' from the name of an old aperitif called 'Fred-Zizi.'

Zizifredo showcases beautiful acidity, with a rough integration of juice and the astringency of tannins from skin contact, along with a pronounced yeasty flavor, all wrapped up in an overall refreshing sensation. This level of quality requires exceptional sensibility to produce. While skin-contact orange wines are now abundant worldwide, Frédéric Cossard demonstrates his exceptional skill even in creating such a casual wine.

Marc Soyard's new experimental cuvée "Australe" is made from Biologic Pinot-Blanc planted on argilo-calcaires soil. Whole bunch fermentation with skin-contact for 3 weeks. No SO2 added, no fining and no filtering before bottling. No doubt, he is an excellent traditional Burgundy wine-maker, but we also think he has another great talent for this type of wine too.

Zapoi is made of 100% Gamay from the vineyards around Villié-Morgon. Well ripe yet fresh, fine astringency gives lively expression to the wine. Smily Gamay wine. instantly delicious now.

Les en hauts is a collaboration between Frédéric Cossard and Damien Coquelet. Damian Coquelet biodynamically cultivates 9ha of Morgon, Chiroubels, Beaujolais-Villages and Beaujolais, and works in the cellar in completely non-interventional manner. Whole-bunch fermentation by natural yeast, no temperature control, no SO2 added during vinification, zero or minimal SO2 at the bottling. The wine of Les en hauts is made in Morgon by the egg tank, and bottled and cellared in Cossard's place for the moment.
Ze Bulle is made by a unique and original method which was invented by Philippe Gourdon of Château La Tour Grise . All the carbon gas and aromas generated during the fermentation process are recharged into the wines before bottling.

The new lot Ze Bulle 2021 has pale pink colour, softly bubbled, a blend of 85% Cabernet Franc and 15% Cabernet-Sauvignon from biodynamically farmed vineyards. Grolleau Noir and Gamay were not blended in this year.

Françoise and Phillipe Gourdon retired in 2015 and then Bruno Ciofi's “Béret & Compagnie” had taken over the production of Ze Bulle in 2018. This lot has freshness and bright details. Alc 9.0%

Perfectly ripe 100% Sauvignon blanc from over 50 years vieilles vignes on Terres Blanches Calcaire(Kimméridgien) soil. Contains 50% botrytis, yield : 20hl/ha. 36 months ageing "sur lie". No SO2 added, bottled without fining and filtration. Rosé d'un Jour is made from 40 years old vines of Grolleau Gris + Cabernet Sauvignon, with residual sugar. / 2023 Release - Mark et Martial Angéli made the label with less information. You could find detailed information such as residual sugar contains, yield, portion of SO2 or certificate of Demeter in the label before, but now all these specifications are not indicated. It's not a big problem, because we have already known what they have been making. The signature wine of Torre alle Tolfe from particular terroir : asl.320m, sandy soil which contains lots of oyster fossils. Sangiovese 80%, Canaiolo 20%, Colorino and Ciliegiolo. Fermented by indigenous yeasts, all the process is run by non-interventional manners. Cement tank s are used for both fermentation and ageing. Intense, bright, ruby red colour. Concentrated, perfumed nose with hints of iron, and lively sour cherry on the palate with a firm core of sandy tannins. Long and Juicy.
