[New Lot] This Pet-Nat is made from old vines of Aligote in Puligny-Montrachet. It has a crisp, lemony flavor with refreshing bubbles. By the way, "Chassornade" is a word coined by Frédéric Cossard, combining "Chassorney" and "Lemonade". Yes, he wanted to make a Pet-Nat that tastes like lemonade! It's cloudy because it was released without disgorgement.

Ze Bulle is made by a unique and original method which was invented by Philippe Gourdon of Château La Tour Grise . All the carbon gas and aromas generated during the fermentation process are recharged into the wines before bottling.
The new lot Ze Bulle 2021 has pale pink colour, softly bubbled, a blend of 85% Cabernet Franc and 15% Cabernet-Sauvignon from biodynamically farmed vineyards. Grolleau Noir and Gamay were not blended in this year.
Françoise and Phillipe Gourdon retired in 2015 and then Bruno Ciofi's “Béret & Compagnie” had taken over the production of Ze Bulle in 2018. This lot has freshness and bright details. Alc 9.0%

Several years after the release of the 2006 and 2007 vintages, the 2009 vintage was released. As for the 2008 vintage, it is planned to be released after even longer aging. The difference in vintage or the addition of Pinot Noir from Benoît Lahaye to the blend has certainly resulted in a distinct impression compared to the 2006. The refined and precise flavors, which could be considered the epitome of sophistication, are an experience that can only be found here.

Clos de Cumières - The vineyard (0.49 ha) consists of equal parts Pinot Noir and Chardonnay, planted in 1964 and 1965. The Champagne blend maintains a 50% Pinot Noir and 50% Chardonnay ratio. Biodynamic cultivation has been practiced since the time of the previous owners, the Leclerc family. The wine is aged in 100% oak barrels for 10 months, bottled in July, and then aged in the bottle for nearly 10 years. It is produced without any added sulfites. The 2012 vintage produced 2,341 bottles. Although labeled as Extra Brut, it has zero dosage. Tirage: 23rd July 2013 / Dégorgement: 16th March 2023
