[Mature Bottle Release] Saint Romain is Cossard's home ground. This is a thrilling signature wine from Frédéric Cossard that puzzles wine critics and sommeliers. It deviates from the typical Burgundy Chardonnay. Combe Bazin belongs to the same geological stratum as Puligny Montrachet.
After more than five years of bottle aging, the fruit, acidity, and minerality that were in explosive balance immediately after bottling are now beautifully integrated, yet the tension remains unusually high. In a typical wine tasting, we don't think this would be identified as a Burgundy Chardonnay.

[Mature Bottle Release] Les Damodes is located on the border with Vosne-Romanée. Over 55 years Vieilles Vignes from 0.3ha small parcel in Les Damodes. Four weeks maceration in wood tank, and four weeks for fermentation by wild yeast. 2018 has a different character compared to 2017, showcasing a striking contrast. It features a warm, rounded, and thick texture with a rich extract. Perhaps due to its location, there are also elements reminiscent of VR, but the unique earthiness distinctly marks it as NSG. Les Damodes consists of areas classified as Village and Premier Cru, but this is classified as Village. However, once tasted, it becomes clear that the quality consistently surpasses that of most other producers' Premier Cru wines.

[Mature Bottle Release] Following 2018, this is the second production of Mercurey. This time, it is made using Qvevris. When we first tasted the Qvevris wine by Frédéric Cossard immediately after its release (debut was the 2018 vintage), we were bewildered by its extremely unique flavor. However, after observing the maturation process over the years, we have begun to understand Cossard's intentions and the direction in which the wine is heading. It goes without saying that 2019 possesses completely different vintage characteristics compared to the 2018 (which is also controversial), so we highly recommend experiencing both.

Les Blanderies 2021: 100% Chenin Blanc, released in 2024, with a production of 1,305 bottles. This time, we received La Lune 2022, Rosé d'un Jour 2023, and Les Blanderies 2021. Regarding La Lune, there was not much difference compared to the previous vintage from 2021, which was already produced under Martial's initiative, although the weather conditions were different between 2021 and 2022. However, Les Blanderies left a significantly different impression than the 2020 vintage. It may have been just that particular day, but its softness and delicacy combined with a pleasant lightness that felt airy, made it seem more vibrant than the 2020 version. We thought that allowing it to acclimate to the environment here for a few more months might help it focus better.
"Les Blanderies are younger vines planted just below VV, terroir is slightly different. It is still clay but the rocks here are phtanites. Phtanites contribute significant natural citric acid to the grapes. In the 90s, my father had to prove to the administration through analysis that he did not add citric acid to this wine; it is all natural thanks to this special terroir" by Martial Angéli.

The most comfortable wine in the world, Rosé d'un Jour! Made from Grolleau Gris. "Rosé d’un Jour was a sweet wine made with over-matured grapes, so depending on the vintage, it was made either with botrytis or passerillage. We have concluded the production of Rosé d’un Jour, with 2023 being the final vintage, to reduce the size of the vineyard and focus on the Chenin", said Martial Angéli.

Les Lune 2022 : Chenin Blanc 100%, Released in 2024. This time, we have received La Lune 2022, Rose d'un Jour 2023, and Les Blanderies 2021. Regarding La Lune, there was not much difference felt compared to the previous vintage 2021, which was already produced under Martial's initiative, although weather condition was different between 2021 and 2022.

[Mature Bottle Release] This is another Saint Romain from Frédéric et Laure Cossard. Needless to say, Saint-Romain is their home ground. Sous la Velle is located 380m above sea level, just next to Sous Roche. The wine has good minerality and pure fruit. Frédéric et Laure Cossard have specially bottled this cuvée only in magnum. In fact, we purchased this cuvée six years ago, but we have never sold it while it has been cellared in Burgundy, making this its first release.

[Mature Bottle Release] This special cuvée is bottled only in magnum format. It is made from Pinot Noir sourced from a tiny parcel in Saint-Romain that is the home ground of Frédéric and Laure Cossard. Characterized by floral notes and lovely red berries, the wine is extremely pure, lively, and silky, which embodies the full style we appreciate from Frédéric and Laure Cossard. While it has been delicious since the beginning, the wine has now reached its peak.

[Mature Bottle Release] Les Chagniots 2017 is the first release from Chanterêves' own vineyard. Les Chagniots is situated between Ladoix and Corgoloin. It is a small parcel of 0.17 ha. We farm organic without certification. As far as spraying goes, minimal copper is used for Downy Mildew, low-fat milk for Powdery Mildew, but no sulfur is applied. The vineyard is ploughed by horse by Pierre Seuillot, who is a master in his field. He specialised in horse ploughing at Leflaive before setting up his small company and now ploughs for many prominent producers in the region. The wine exhibits energy, stoniness, and minerality, presenting a fresh and vibrant profile. (by Chanterêves)

[Mature Bottle Release] This wine is made from organically farmed Pinot Noirs from Ladoix, lieu-dits "Les Briquottes", which offer fine bouquets of red fruits such as raspberries. Its feather-like texture makes us almost overlook the presence of tannins. The charm of this wine lies in its contrast and contradiction; initially, it gives off a light impression; however, we are soon struck by its depth and beauty. The new Chassorney by Aurélien Verdet, starting with the excellent 2022 vintage, is a wine with great aging potential. It is easy to imagine its future beauty. We could sense a subtle difference from Frédéric Cossard in the well-structured, authentic Bourgogne style that beautifully integrates the ripe, concentrated fruit. These wines are very promising and will likely evolve gracefully over time.
Domaine de Chassorney Volnay is made from vines over 50 years old on the lieux-dits of Les Lurets, Les Grands Poisots, Paux Bois, and Les petits Poisots. This assemblage of four parcels contributes to the wine's depth and balance.

[Mature Bottle Release] This seductive smoothness is the true worth of Cossard's wine. The overpowered fruitiness just after the release has beautifully integrated today, evolving into a thick texture and luxurious smoothness. This is a typical expression of the 2018 vintage from Chassorney/Cossard.

[Mature Bottle Release] The Bedeau 2017 is made from Pinot Noir Vieilles Vignes (over 40 years old) from the Volnay and Nuits-Saint-Georges areas. This is one of the bibles of Vin Nature and a good choice for a first bottle to get to know Frédéric Cossard. It is fine and delicate.
Bedeau has been very popular lately, and it is the most casual label in Frédéric Cossard's lineup, so it sells out quickly. Therefore, it does not qualify for our long-term aging stock. However, when we started selling the 2017 vintage, Cossard was still relatively unknown in Hong Kong, and when the 2018 vintage arrived, there were still 120 bottles left that literally went into storage. As a result, we are really glad we still have some left.

[Mature Bottle Release] This wine is a 60 years old Vieilles Vignes from a 0.35ha small parcel in Les Champs Perdrix. This lieu-dit is located just above La Tache and surrounded by Aux Reignots, Les Gaudichots and Au Dessus des Malconsorts. Immediately after its release, the wine's immense potential was certainly felt, but we were taken aback by the strong concentration of dark fruits, which was quite different from the delicate and flowing style of Frédéric Cossard's wines that we experienced in the 2017 vintage. We wondered, 'After aging, would this wine truly elevate to that "Cossard" manner?' However, such concerns seem to have been unfounded. The abundant ripe fruit has beautifully melded into a luxurious, smooth wine with a rich texture. This is a gorgeous Vosne-Romanée that every Burgundy drinker dreams of, with a sensual aroma, multi-layered complexity, and an extremely fine texture on the palate.

[Mature Bottle Release] This is a wine made from over 60 years of Vieilles Vignes planted on a small parcel of 0.2 ha in Lieu-dit Les Herbues. It has a sensual aroma with no heaviness; it is delicate and extremely smooth. What a beautiful liquid!
In contrast to the Vosne-Romanée 2018, this Chambolle-Musigny 2018 consistently exhibits an airy, pale, soft, and delicate style that can be considered a quintessential example of exceptional Chambolle-Musigny, both in the barrel, immediately after bottling, and now after several years of aging.

[Mature Bottle Release] The Lieu-dit Les Damodes, located on the border with Vosne-Romanée, produces wine from over 55-year-old Vieilles Vignes grown in a small 0.3ha parcel. The wine undergoes a four-week maceration in a wood tank, followed by a four-week fermentation using wild yeast. It is then aged for one year in barrel (20% new) and an additional 3 months in stainless steel tank before bottling. The result is a pure expression of fine Pinot Noir, with a sensual aroma and an extremely fine texture on the palate. After aging, the wine has become sultry and alluring.

[Mature Bottle Release] This is Frédéric Cossard's first vintage in this AOC. If my memory serves me correctly, Mercurey should be the hometown of Laure Cossard. This wine has a well-concentrated mixture of black fruits, oriental spices, and roasted notes. The wine is energetic, dense, and acidic. It is a very lively wine. This wine was initially so dense, powerful, and wild that it could be mistaken for a Rhône wine right after its release, but now, after several years of aging, it has become remarkably refined. Among the series of back vintages released this time, this wine surprised and reassured me the most.

[Mature Bottle Release] The wine is made from extremely old Vieilles Vignes, with some vines over 60 years old and others reaching 90 years old. The small 0.22ha parcel produces an extremely refined expression of fruit flavors, with high density, richness, and a well-structured backbone of a noble acidity and minerality. This wine is approaching its optimal drinking window, but it still has room for further aging and development.

[Mature Bottle Release] This wine comes from the same source as the 1er Cru Monts Luisants. This is Cossard's first vintage producing the cuvée Les Champs de la Vigne. It has a seductive and complex aroma of ripe fruits and spices, with fine minerals. Remarkable transparency. This wine is approaching its optimal drinking window, but it still has room for further aging and development.
