The combination of the process of complete fermentation and a long lapse of time makes this unparalleled Kimoto Junmai-shu. The bottle is released after long ageing period - 6 to 8 years, sometimes over 10 years. It has beautiful amber colour and superb purity.

Pinot Noirs from Paris l’Hôpital in Haute Côte de Beaune of dark sandy Granit. Floral with bouquets of dark red fruits. Fine tannins with racy acidity. Complex and structured. A very elegant and charming Haute Côte impresses with its scale and performs well above its humble appellation and it well matches a good village or even some 1er cru.

[Late Release Magnum] Les Fouchardes Monopole is made from Chenin Blanc planted in 1970. Wines are aged for two years in barrels before bottling. Yield in 2019 was 21hl/l, extremely low as usual. Eventually made only 2,439 bottles and 108 magnums. 2019 is made as a Sec : relatively dryer than usual.
