This wine is made from grapes from Côtes du Rhône: a blend of Bouboulenc, Grenache Blanc, and Muscat d'Alexandria. It undergoes maceration-carbonic using special tank equipment for 14 months. Fred (Frédéric) named this wine 'Zizifredo' from the name of an old aperitif called 'Fred-Zizi.'
Zizifredo showcases beautiful acidity, with a rough integration of juice and the astringency of tannins from skin contact, along with a pronounced yeasty flavor, all wrapped up in an overall refreshing sensation. This level of quality requires exceptional sensibility to produce. While skin-contact orange wines are now abundant worldwide, Frédéric Cossard demonstrates his exceptional skill even in creating such a casual wine.
The 2021 vintage is still cloudy. These cloudy wines tend to clarify both in appearance and taste over time, becoming more stable. As a result, there's a significant difference between wines consumed immediately after release and those that have aged for a few years. Each stage offers its own unique deliciousness, so it's enjoyable at any time. At this moment, the 2021 vintage seems ideal for casual home drinking, standing wine bars, or chilled in an ice bucket for outdoor summer lunches.
In contrast, mature vintages, having developed their condition over several years, have settled well into wines suitable even for fine dining restaurants. If you're interested, try aging it for 3-4 years.

Frédéric Cossard manages his vineyards using 'homeopathic farming.' This is one of the most advanced agricultural practices, which is a mixture of homeopathy and biodynamics, and it has been developed by Frédéric Cossard himself. He does not use SO2 or any chemical products in the cellar, so vinification is also totally natural.
As a result of a high level of integration of sense, intelligence, and technique, the wines are extremely pure, clean, and directly express the terroir. Frédéric Cossard has owned and managed the vineyards of Saint-Romain, Volnay, Savigny-lès-Beaune, and Hautes-Côtes de Beaune for 30 years, elevating them to be among the top vineyards in those appellations.
In 2018, Frédéric Cossard appointed his long-time friend Aurélien Verdet as the successor at Domaine de Chassorney. Together, they produced wine over a three-year transition period. The 2022 vintage is the first produced under the leadership of Aurélien Verdet, who has fully inherited Frédéric Cossard's methods and philosophy. The wax cap color has changed to orange. Meanwhile, the "FREDERIC COSSARD" labels for Vosne-Romanée, Chambolle-Musigny, and others will continue to be handled by Frédéric and Laure Cossard as usual.

Frédéric Cossard produces wines by purchasing grapes. He has established strong connections with growers through his previous job and has a discerning eye for selecting quality grapes. He produces Vosne-Romanée, Nuits-Saint-Georges, Morey-Saint-Denis, Chambolle-Musigny, Chassagne-Montrachet, Puligny-Montrachet, and Beaune—all Burgundy appellations. Additionally, Cossard produces wine from grapes sourced from other regions such as Jura, Languedoc, and Beaujolais. The quality of his négoce wines is the same as that of his domaine wines.
