The vineyard located in Avize, part of the Côte des Blancs, has been cultivating grapes since the 18th century. In the 1960s, the current head, Étienne Carsac’s grandfather, expanded the vineyards. Half of the land is situated in the Aube region, near Sézanne; the other half is located close to Épernay (in Avize, Grauves, and Bisseuil). In 2010, at the age of 26, Étienne decided to live in Avize to manage the 2.8 hectares of vineyards that his grandparents had spread around Avize, which had previously been sold to large Champagne houses.

The wines vinified are spread over several sectors:

– La Côte des Blancs (Avize and Grauves),
* Clos des Maladries

– La Grande Vallée de la Marne (Bisseuil),
* Les Rocheforts, * L'échappée belle

– La Côte de Sézanne (Montgenost),
* L'échappée belle

– La Côte des Bars (Bligny),
* Val lHermite

The grape varieties are mainly focused on Chardonnay, but he also took the gamble of replanting old grape varieties (Petit Meslier, Pinot Blanc, and Arbanne) on certain plots.

Étienne built his viticulture model on the expectations he has for his soils and his environment. Cultivation practices are therefore focused on the well-being of the plant and people. Observations, soil work, exploration, and constant questioning are essential to accomplish quality work.

Vinification is intended to be minimalist, aiming to express this terroir as accurately as possible. Production is extremely limited, stemming from a policy aimed at perfection within his truly controllable range.
